Ingredients: serve 12
2 whole racks pork spareribs
Finger Linkin Ribs

Spice Rub
1 tablespoon sugar
2 teaspoon salt
2 teaspoon pepper
2 teaspoons paprika

Barbecue Sauce
1 cup ketchup
½ cup distilled white vinegar
¼ cup brown sugar
2 teaspoons minced garlic
2 teaspoons worcestershire sauce
1 teaspoon yellow mustard
1 teaspoon liquid smoke, optional
½ teaspoon hot pepper sauce, or to taste

Procedures: 
Preheat oven at 300oF
In a bowl, mix sugar, salt, pepper and paprika together and rub all over ribs. Set aside for a few minutes.

Coat a large roasting pan with a little oil. Place the ribs meaty side up. Cover with faoil and bake for about 2 to 2 ½  hour of until meat is very tender.

Meanwhile, mix all the barbecue sauce ingredients in a medium saucepan. Bring to a boil, reduce heat and simmer, uncovered for 25 to 30 minutes, stirring occasionally, until sauce is thickened.

Brush sauce on cooked ribs. At this point, ribs may be served together with remaining sauce. But if desired, ribs may be packed and grilled over moderately heated coals later at a picnic site for a crusty exterior. (to grill: cook ribs 4 to 6 inches from heat source for 10 to 12 minutes, basting once or twice with the sauce and turning ribs over 3 to 4 times to prevent burning.)

Cut into individual ribs and serve with remaining sauce.

Seared Black Peppercorn Steaks with Horseradish – Potato Salad
Why this recipe works: we were inspire by the technique used in steak aupoivre – coating beef with black peppercorns before searing – but we wanted to do it faster. Cracking peppercorns with the bottom of a pan takes a fair amount of both times and brawn, so we do the job with an adjustable pepper mill set to its coarsest grind. Instead of making a horse radish sauce to go with our steak, we incorporate the same flavors into a potato salad, prepared horseradish can vary from brand to brand; for the best results, use the refrigerated kind instead of one off the supermarket shelf.

Ingredients: serve 4
2 pounds red potatoes, scrubbed and cut into ¾ inch chunks salt and pepper
½ cup mayonnaise
1/3 cup sour cream
2 tablespoons white wine vinegar
4 teaspoons prepared horseradish, drained
1 tablespoon Dijon mustard
¼ cup chopped chives
4 boneless strip steaks (about 10 ounces each), about 1 inch thick
4 teaspoons coarsely ground black pepper
1 tablespoon vegetable oil

Procedures:
  1. Bring potatoes, 1 tablespoon salt, and enough water to cover potatoes by 1 inch to boil in large saucepan. Reduce heat to medium and simmer until potatoes are just tender, 8 to 10 minutes. While potatoes simmer, whisk mayonnaise, sour cream, 1 tablespoon vinegar, horseradish, mustard, chives, ¾ teaspoon salt, and ¾ teaspoon pepper in large bowl.
  2. Drain potatoes, then spread in even layer on rimmed baking sheet. Drizzle remaining tablespoon vinegar over hot potatoes and toss until evenly coated. Refrigerate for 10 minutes.
  3. Meanwhile, pat steak dry with paper towels and season with salt. Rub 1 side of each steak with coarse black pepper. Heat oil in large skillet over medium – high heat until just smoking. Place steaks with peppered side down in skillet and cook until well browned on both side, 3 to 5 minutes per side. Transfer to plate, tent with foil, and let rest 5 minutes. Toss cooled potatoes with dressing and season with salt and pepper. Serve with steak.

3 lbs. Pig’s leg (pata), cut in 2 ½ inches length
1 bunch bok choy
3 pieces ripe saba banana, sliced
2 medium potatoes, cubed
1 cup cubed calabaza squash (kalabasa)
1/2 cup tomato sauce
6 to 8 cups water
1 piece beef broth or 2 teaspoons beef powder
1 teaspoon minced garlic
1 small onion, minced
3 tablespoons cooking oil
2 tablespoons fish sauce
Ground black pepper to taste

Procedures:
  • Heat oil in a pot. Saute garlic and onion. Add the duck and cook for 3-5 minutes or until all sides are light to medium brown.
  • Pour-in the fish sauce, tomato sauce, and water. Add the meat cube (or dust). Bring to a boil.
  • Cover and simmer for 50-70 minutes. Add the potato, banana and pumpkin pumpkin. Cook for 5-7 minutes.
  • Put-in the bok choy (or pechay) and then sprinkle some black pepper. Cover.
  • Turn off heat. Let the cover is for 5 minutes until the residual heat cook the bok choy.
  • Transfer to a serving platter. Serve.

Our Recipe for Veggie Danish:

Veggie Danish, Savoury or Savory Danish, no matter what it’s called, it’s delicious!
This recipe is of our own invention but these buns are very much inspired by our visit to the Eden Bakery at the Eden project in Cornwall. After failing to find any kind of recipe for them, we started experimenting and came up with our own version of this savory concoction. The possibilities for the filling are endless of course. Personally I really like the one with pesto, and lots of it! The combination with mozzarella and tomatoes is the logical one, but we also experimented with goats cheese, sun dried tomatoes, different types of greens, herbs and seasoning. You can try olives, mushrooms, garlic, peppers, artichokes and the list goes on. Anything you would love on a veggie pizza or focaccia would do.

Anyway, we have become very fond of this addition to our bread repertoire and hope you will give them a try, maybe tell us your favorite filling…

 Ingredients for the Poolish
200 g wheat flour / bread flour
200 ml water
1 g instant yeast
Start by making the poolish, mixing flour, water and yeast with a spatula until well combined (about 30 seconds), cover the bowl with clingfilm and leave to develop at room temperature for 4 hours.

Ingredients for Veggie Danish Dough
poolish
300 g wheat flour / bread flour
70 ml lukewarm water
50 ml olive oil
9 g sea salt
7 g instant yeast

Ingredients for the Veggie part
Version 1
Homemade pesto, mozzarella, softened red onion with some salt, water cress
Version 2
Cherry tomatoes, soft goats cheese, mixed green leafs, herbs of choice (fresh thyme and oregano is good), seasoning to taste

Making the Veggie Danish:

Veggie Danish
Scoop the poolish you prepared in advance in your mixing bowl. Add the flour, salt, and instant yeast. Now add the water and mix in your mixer with dough hook until it comes together. Now add the olive oil. Mix for 8 minutes, or until the dough is smooth and slightly sticky (if you knead by hand it will take a bit longer). The dough should clear the sides of the bowl but stick ever so slightly to the bottom of the bowl.
Cover the bowl with clingfilm and leave to rest at room temperature for 1 hour.

Preheat your oven at 200ºC / 390ºF.
Turn out the dough on a lightly floured work surface and with a rolling pin roll out into a rectangle of about 5mm or 1/5 inch thickness. Generously spread and cover the surface with your ingredients of choice (see suggestions). Shape into a roll and cut into 7 to 8 pieces, turn the pieces on their side, cover with floured or oiled clingfilm and leave to proof for about 30 minutes.


Bake in the preheated oven for 20 minutes. Eat while warm. You can also freeze them and later reheat them in your oven. But fresh is best of course!

Whole Wheat pasta


Whole Wheat pasta with green and walnuts
Why this recipe works: we love the nutty, earthy flavor of high quality whole wheat pasta, and we found that it was a great foil for the vegetal taste of the kale. Unfortunately, the quantity of kale necessary for this recipe meant that we would have to cook the greens in several batches. Wanting to save time without skimping on the greens, we found the solution by wilting half of the greens in a hot pan with out onions early in the process, then adding the remaining kale with the chicken broth. We finish the pasta by simmering it right in the sauce, a step that helps to integrate the components of the dish. The pasta not only absorbs the flavor of the sauce, but it also releases some of its residual starch, which helps to thicken the sauce slightly.

Whole wheat pasta green, walnuts, and ricotta salata
Ingredients: serve 4
2 tablespoons olive oil
2 onion, halved and sliced thin
6 garlic cloves, minced
¼ teaspoon hot red pepper flakes
4 anchovy fillets, minced
1 ½ pound(about 2 bunches) kale, thick stems trimmed, leaves chopped
2 cups low sodium chicken broth salt and pepper
1 pound whole wheat spaghetti
1 cup toasted walnuts, roughly chopped
1 cup shaved ricotta salata cheese

Procedures:
  1. Bring 4 quarts water to boil in large pot. Heat oil in large skillet over medium high heat until shimmering. Add onions and cook until starting to brown, about 5 minutes. Add garlic, pepper flakes, and anchovies to skillet and cook until fragrant, about 30 seconds
  2. Add half greens to pan and toss occasionally until starting to wilt, about 2 minutes. Add remaining greens, broth, and ¾ teaspoon salt; cover and cook, tossing occasionally, until greens are tender, about 15 minutes.
  3. Meanwhile, add 1 tablespoon salt and spaghetti to boiling water and cook until al dente. Reserve ½ cup cooking water, drain spaghetti, and return spaghetti to pot. Stir in sauce with greens and reserved cooking water as needed. Simmer until pasta has absorbed the sauce. Season with salt and pepper. Transfer to serving bowl. Sprinkle with walnuts and cheese. Serve.

Red snapper or lapu lapu is one of south Florida's most popular fish. here, it is available at most supermarkets.

make 4 main dish serving




Ingredient:
1 whole red snapper or sea bass (about 2 pounds) cleaned and scaled, head and tail left on.
3 tablespoon extra virgin olive oil
1/4 teaspoon ground black pepper(optional
1/8 plus 1/4 teaspoon  salt (optional)
1/4 cup finely chopped celery
1/4 cup finely chopped onion
2 tablespoons finely chopped green pepper
1 green onion, chopped
1/2 cup pine nuts, toasted
2 tablespoons whole almonds, toasted and chopped coarsely
2 tablespoon finely chopped fresh parsley leaves kitchen string for tying fish
1 square (18 inches) heavy duty foil
3 thin lime slices
3 thin onion slices
3 thin tomato slices
1 tablespoon fresh lime juice celery leaves, green onion tops, parsley and lime wedges for garnish

preparation:
1 preheat oven to 350F. Rub outside of fish with 1 tablespoon oil. Sprinkle inside and outside of fish with 1/8 teaspoon black pepper and 1/8 teaspoon salt, if using.
2 in 2 quart saucepan, heat remaining 2 tablespoon oil over medium heat until hot. Add celery, onion, green pepper, and green onion, add celery, onion, green pepper, and green onion and cook 3 minutes or just until vegetables are tender, stirring occasionally. Remove saucepan from heat; stir in pine nuts, almonds, and parsley.
3 spoon pine nut mixture into cavity of fish. tie fish with string to close cavity. transfer fish to half of foil square set on large cookie sheet. top fish with overlapping slices of lime, onion, and tomato. sprinkle with remaining 1/8 teaspoon pepper and 1/4 teaspoon salt if using. Drizzle lime juice over fish.
4 Fold other half of foil over fish. Pinch foil edges together to seal tightly. Bake 30 minutes or until fish flakes easily. Before serving, with kitchen shears, cut opening in top of packet to let steam escape, then carefully pull back foil. transfer fish to large platter. Garnish with celery leaves, Green onion tops, parsley, and lime wedges.

Each serving: about 402 calories, 50g protein, 6g carbohydrate, 19g total fats (3g saturated), 2g fiber 84g cholesterol, 162 mg sodium

I strongly feel that while the entrepreneurial mind enables a person to start and grow a business venture, it is compassion that will sustain it. If the primary motivation for setting up a business enterprise is profit, then an entrepreneur can lose his motivation once this is met. The business no longer becomes meaningful. The search for meaning in what we do is what often sustain us.
            Meeting the bottom line is important because it will allow me to pay my teacher and improve our facilities, but it is not the motivation that sustains me and keeps me fully invested in the vision of our school.
            I know of people who have set up schools, then just as quickly closed  them down, simply because they were no longer profitable. I have also met many venture capitalists who have offered to grow my school, but at a cost.
            I feel that in the end, a true entrepreneur will find more reward in the good that his business id doing for others whether it is through a service, a  product or job generation than the profits it brings.
            Compassion is an equally important component of the entrepreneurial mind. It determines the kind of decisions an entrepreneur will make, the type of culture a company will have and how customers and employees will be treated. Compassion is the heart of the business.
            The challenge for parents and teachers who want to teach compassion is to get children to care about people outside their families. Filipinos value close family ties, but we are not raised to share the same care and compassion for people in the community and the country.
            It will take a deliberate effort among parents and teachers to give children the opportunity to actively show compassion toward others.

For Kidss, by Kids Bazzar to teach children to be entrepreneurs with hearts. They create products and sell them for the benefit of underprivileged children.
            It is never too early to teach children that they can already think of ways to improve people’s lives. You can even start by asking your child to sort all his old toys and old clothes, sell these through a rummage sale and donate the earnings to support a feeding program that your child can be part of.

Believe that Filipino can. Love for country and caring for the Filipino should be in the heart of any future entrepreneur. We should model for our children pride in our heritage and our products. Buy Filipino and let your child know why. Explain how buying Filipino products will help generate businesses and jobs for our countrymen. My rule for is that we can only buy abroad what we cannot buy here. It has become second nature for my children to say, Mom, we have that in the Philippines, let’s not buy it here. By doing this, we come home with lighter luggage all the time.
            Remember that taking pride in the Filipino worker and our products will motivate the future entrepreneur to invest in our country.

Care about others. Successful entrepreneurs recognize that people contribute greatly to their company’s success. Teach your child to care more about others than the profit they can generate. Happy employees will be more productive employees. Joselito Campos learned from his father that Loyalty is a two way street. You have to take care of the employees and they will work (long and hard) for you. We treat our employees more as a family. When the entrepreneurial mind is wired to care about others, the motivation for product development and human resource development will always be meaningful and for the service of others.

He sold the product to an Ausralia buyer within seven days, and soon Brum2000 added gadgets, e-Book, I.D. tags, cellular phones, laptaps, and laptap accessories to his wares. Today, brum2000 sells $1,000 worth of merchandise a month but invests only three to seven hours a day (between 7 p.m and 12 midnight) answering email from buyers. He also sells at eBay.com, which charges minimal fees to list products and put photos and a final value fee on the item being sold.

  • Procedures:
  • Preheat oven to 350 degrees F (Gas mark 4 or 180 ° C).

Procedures:
  • Prepare meat: Trim excess fat with a sharp knife. Double fine tip end under to approximate the thickness of the rest of the roast. Tie with butcher's twine, then keep the meat with string tie every inch of 11/2 to 2 (to help the meat keep its shape). Silver snip with scissors to keep roast from curling during cooking. Then, mix the oil, garlic, rosemary, thyme, pepper and salt and rub over roast to coat. Set aside meat.

Place meat on hot grill and close the lid, grill until well charred, about 5 minutes. Turn meat and close the lid, grill until well seared on second side, another 5 minutes.
  • Move the meat to cool side of the charcoal grill, or turn off the burner directly under the meat and the rest in turn one or two burners (depending on the style grill) to medium. Cook until meat thermometer inserted in the thickest section registers 130 degrees rose pink, 45 to 60 minutes, depending on size of tenderloin and grilled. Let stand 15 minutes before carving.

Pan Seared Halibut with Sweet pea Puree and Walnut brown Butter
Ingredients: serve 4
4 shallots, minced (about ½ cup)
6 tablespoons unsalted butter, cut into 6 pieces
2 cups frozen peas
½ cup low sodium chicken both salt and pepper
4 skinless halibut fillets (6 to 8 ounces each), about 1 inch thick
1 tablespoon vegetable oil
½ cup walnuts, toasted and chopped
1 tablespoon minced fresh parsley leaves
1 teaspoon minced fresh thyme leaves
1 tablespoon lemon juice

Procedures:
  1. Set aside 1 tablespoon of shallots. Heat 2 tablespoons butter in large saucepan over medium heat. And remaining shallots and cook until shallots are soft but not browned, about 3 minutes. Add peas and broth; bring to simmer. Reduce heat to medium low and cook, covered, until peas are tender, 3 to 4 minutes. Puree pea mixture in blender until smooth, adding a little water if needed. Season with salt and pepper. Return puree to saucepan, cover, and set aside on stovetop to keep warm.
  2. Pat fish dry with paper towels and season with salt and pepper. Heat oil in large nonstick skillet over medium – high heat until just smoking. Cook fish until golden brown and just cooked through, about 3 minutes per side. Transfer fish to platter and tent with foil.
  3. add remaining butter to empty skillet, swirling pan constantly, until butter turns dark golden brown and has nutty aroma, 30 to 60 seconds. Add walnuts and cook until fragrant, about 30 seconds. Remove pan from heat and stir in parsley, thyme, and lemon juice. Season with salt and pepper. Pour walnut butter over fish. Serve with pea puree.

  • Put the pieces of butter in the mixing bowl with cold water. Mix with a pastry blender. If you do not have one, use 2 kitchen knives instead. You should mix like dough being cut into several pieces.
  • Take about 3 tablespoons of the mixture and then shape it into a ball. do this until all the dough is consumed.
  • Refrigerate the dough balls for about 20-25 minutes. Flatten the dough ball gently pressing the center by hand on a flat surface dusted with flour clean. Use a rolling pin to roll the dough and make a flat circle about 4-5 inches in diameter.
  • Arrange about 4-5 tablespoons of filling in center of dough. Bending block edges or by pressing the tip of a fork on both sides. Meanwhile, heat about 2-3 cups of oil in a pot. Fry patties about 3-5 minutes or until the color turns golden brown.
  • Remove from the pot and then arrange on a plate with paper towels linewd. Allow excess oil to drip-off. Transer to a serving dish.
