cinnamon roll pancakes recipe


Cinnamon rolls and pancakes, two perfect breakfast foods! What would make them even better? Combining them and making cinnamon roll pancakes of course! This is an easy recipe that doesn't take long to cook and the result is delicious. Top it off with a side of bananas, or even some strawberries and blueberries. This is a delightful twist on the plain, boring pancake that'll only leave you wanting more!

Yields: Serves eight four inch pancakes

-Ingredients:

•1 cup all-purpose flour
•2 teaspoons baking powder
•1/2 teaspoon salt
•1 cup milk
•1 large egg, lightly beaten
•1 tablespoon vegetable oil
•8 tablespoons (1 stick) butter, melted
•1/4 cup and 2 tablespoons light brown sugar
•1/2 tablespoon ground cinnamon
•2 ounces cream cheese
•3/4 cup powdered sugar
•1/2 teaspoon vanilla extract

-Instructions:

1.Prepare the cinnamon filling: Stir together 4 tablespoons (1/2 stick) of butter, the brown sugar and cinnamon. Once you're done, set it aside in a zip-lock baggie.

2.Prepare the glaze: heat other half of the stick of butter over a low heat until it's fully melted. Turn off the heat and whisk in the cream cheese until it's smooth. Sift the powdered sugar into the pain and add in the vanilla extract. Set aside.

3.Prepare the pancake batter: Whisk together the flour, baking powder and salt. Next whisk in the milk, egg, and oil just until the batter is moist.

4.Cook the pancakes: Heat a nonstick skillet over medium heat and don't forget to spray it with non-stick spray! Use an ice cream scoop or a 1/3 cup measuring cup will work just fine to add the batter to the skillet. Spread the batter into a circle. Reduce heat to medium low. Cut the corner of the zip-lock baggie and begin pouring the filling when your pancake begins to form bubbles. Start from the center and swirl it around. Cook for 2 to 3 minutes or until golden brown then flip to the other side. Cook for another 2 to 3 minutes then place it on a plate. Repeat for the rest of your batter.

5.Add on the cream cheese glaze and you're ready to eat! Enjoy!
