* 6 ounces dried pasta shapes in variety, such as fusilli, penne, shell, etc.
* 2 small, boneless chicken breasts
* Salt to taste
* Freshly ground pepper
* 2 tablespoons butter
* 1 tablespoon olive oil
* 1 ? cloves garlic, smashed through a garlic press
* ? large or 1 small bunch broccoli, stems and florets cut into small pieces
* ? cup chicken broth
* Juice of ? lemon
* Zest of ? lemon
* ? cup walnuts, chopped and toasted at 180? C for 2-4 minutes
* ? cup freshly grated parmesan cheese, plus extra for serving
Directions:
1. Start your pasta recipe by bringing a large pot of water to a boil and salting it generously. Cook the pasta till al dente to have pasta noodles of a perfect consistency. Drain it and put it to the pot, adding 1 ? tablespoons of butter on top.
2. Half way through cooking the pasta, start patting the chicken dry with a clean kitchen towel for the pasta recipe.
3. Season the chicken on all sides with salt and pepper. In a very large pan, put the olive oil and remaining ? tablespoon of butter and keep over a medium flame. Cook until completely melted and foamy and then add the chicken. Saut? brown and cooked through for the pasta recipe. Cook the chicken over a low flame to avoid burning it.
4. Remove the chicken from the pan and put on to a cutting board and cut into thin slices for later in the pasta recipe.
5. Keeping the flame low, add the garlic to the same pan that you cooked the chicken in. Keep stirring for a little while till the garlic is fragrant but not brown.
6. Add the broccoli, the broth and salt to taste for the sauce of the pasta recipe. Keep stirring to dissolve the browned bits on the bottom of the pan.
7. Cover the pan and turn the flame to medium. Keep cooking until the broccoli is just tender but not overcooked.
8. Add the chicken to the pan as well as lemon juice, zest, walnuts and the buttered pasta. Stir thoroughly to mix the pasta recipe completely.
9. The pasta recipe should be full of flavour and have a lemony zing. Add more seasoning according to your taste.
10. Add the parmesan cheese to the pasta recipe just before serving.
