Ingredients:
- 200g lentils
- 1 red onion, chopped
- 2 cloves garlic, chopped
- 2 bay leaves
- 2-3 teaspoons curry powder
- Handful of coriander/cilantro, torn
- 1 small tomato, chopped
- ½ lime
- Wash lentils
- Boil with water until water is almost absorbed (lentils will be soft)
- Turn off heat
- In another pan, put 2 tablespoons olive oil. Fry onions, garlic, and curry leaves, and tomato
- Add curry powder
- When onions go brown, add to lentils, and put heat back on
- Stir, and leave to simmer
- When lentils appear completely "mashed" (as in picture), the dish is ready
