A Shell Pasta Recipe With Greens To Make Your Day (rajiv tiwari)

Ingredients:

* 1/2 pound Shell pasta
* Vegetable oil, for frying
* 1 cup drained canned chickpeas, patted dry
* Pinch of ground cumin
* Pinch of ground coriander
* Salt to taste
* Freshly ground black pepper to taste
* ? cup extra-virgin olive oil
* 4 clove garlic, thinly sliced
* ? teaspoon crushed red pepper
* 1 cup grape tomatoes, halved
* ? pound Swiss chard, stemmed and leaves coarsely chopped
* 4 ounce fresh mozzarella, cut into ? inch cubes
* 8 large basil leaves, torn

Directions:

1. Start your pasta recipe by bringing a large pot of salted water to boil. Cook the shell pasta until al dente. Drain and make sure you reserve ? cup of the cooking water.

2. Meanwhile, in a medium, deep pan, heat ? inch of vegetable oil until shimmering.


3. Add in the chickpeas and cook over a high flame until nice and crisp for the pasta recipe. Transfer them to a plate and put a paper towel on top to soak the excess oil. Sprinkle with the cumin and coriander, and season with salt and black pepper according to your taste.

4. Clean the pan off the oil and add in the olive oil, garlic, and crushed red pepper for the pasta recipe.

5. Cook over a moderately high flame until fragrant. Add in the tomatoes and cook until softened, 3 minutes. Stir in the chard and cook, constantly stirring, until it's wilted. Add the salt and black pepper to season your pasta recipe.

6. Add in the pasta and reserved cooking water to the skillet and cook it over a moderate flame. Keep stirring the pasta recipe to mix well.

7. Add in the mozzarella and basil and toss the pasta recipe again.

8. Spoon the pasta recipe into bowls and sprinkle generously with the chickpeas and serve.
